PAPAW’S
CAST-IRON SKILLET DINNER
(3-EVERYTHING IN THE POT MEAL)

1-BIG CAST IRON SKILLET (OR CAST IRON DUTCH OVEN FOR CAMPFIRES www.Dutchovenmagic.com )
VEGETABLE OIL TO SUIT
3 SWEET POTATOES
3-IDAHO POTATOES
3-RED POTATOES
3 MED. YELLOW/WHITE ONIONS
3 MED. YELLOW SQUASH (SAVE TIL LAST TO PUT IN, AS YOU DON’T WANT TO COOK THEM MUSHY)
3 (OR MORE) JALEPENO PEPPERS
3 LBS OF SMOKED SAUSAGE (POLISH SAUSAGE, CUT UP BEEF, OR CHICKEN
3-BELL PEPPERS (RED, YELLOW, GREEN)

I DON’T PEEL POTATOES ANYMORE. JUST WASH GOOD, AND SLICE THEM THIN, STARTING WITH THE SWEET POTATOES IN THE HOT OIL SKILLET. ADD OTHERS INGREDIENTS, AS YOU ARE SLICING THEM UP. SEASON WITH CHILI POWDER (OR A COUPLE PACKAGES OF TACO MIX) A FEW MINUTES BEFORE SERVING, ALLOWING SEASONING TO SOAK INTO THE FOOD. YOU WANT THE POTATOES DONE, AND DON’T OVERCOOK THE REST.
This should be cooked over a campfire grill. Cooking outside, with friends or family, seems to sweeten the meal. (but it can be cooked on stove-top)
